Fried Green Tomatoes Recipe

As I mentioned in my post earlier this week, we made fried green tomatoes after I picked some up at the Farmer’s Market. They are one of my favorite things to order at a restaurant so I figured why not try them myself? Here’s what I did:
Ingredients:
– 2 green tomatoes
– 1 egg
– 1/2 cup buttermilk
– 1/2 cup flour
– 1/2 cup cornmeal
– oil
– salt

1. Slice 2 green tomatoes into 1/3 inch slices.

IMG_63102. Set out 3 bowls. In the first one put 1/4 cup of flour. In the second put 1 egg and 1/2 cup of buttermilk. In the third combine 1/4 cup of flour, 1/2 cup cornmeal and a teaspoon of salt. (sorry the bowls are out of order in the picture above!)

IMG_63113. Dip each tomato slice in each bowl in order, first the flour, then the egg mixture and finally the cornmeal.

IMG_63134. Pour oil in a skillet and heat at medium-high.

5. Drop each tomato in the oil and cook for 2 minutes on each side. Put on a plate lined with paper towels.

We whipped up a quick sauce made with mayo, hot sauce and relish :) Enjoy!

 

 

Easy appetizer: goat cheese stuffed peppers

I hope everyone had a great Valentine’s Day! It was too cold for the picnic on the boat I was hoping to have, so instead we took a long walk around a park close by and then made a big dinner at the house! I wanted to share the recipe for the appetizer we ate while we cooked. It would be great to bring to a party and it’s super easy! Disclaimer: I made 12 of them and between the two of us they were completely gone before dinner was ready!

Ingredients:
-1 bag of mini sweet peppers
-1 4oz. package of goat cheese
-salt and pepper
-pesto sauce for dipping

1. Preheat oven to 350 degrees.

2. Cut the concave side of the peppers off (so they won’t tip over), leaving the stem on.

3. Remove the seeds and membranes and place on a lightly greased baking sheet.

4. In a bowl, stir together goat cheese with salt and pepper (I microwaved the cheese first for about 10 seconds to make it easier to stir and scoop out).goat cheese appetizer

5. Scoop the goat cheese into each pepper.

6. Bake for 15-20 minutes.

7. Serve with a bowl of pesto sauce for dipping.
